New Season, New Recipes, New Chapter

It’s that time of year where you can literally feel the transition of seasons. This year it has come with quite few changes in my own life, both big and small, good and bad. As much as the bad hurts, it brings with it opportunity. And so I find myself forced into change and that itself brings excitement. It really does feel as though a new chapter is beginning in my life. The start of the school run gives me a chance to gather my thoughts and contemplate on these things. This mornings was particularly gorgeous. I came across the most stunning patch of wild flowers and had to stop to take in the sheer variety! I managed to get a few photos, as you can see above. I felt motivated and inspired!

So I’ve been meaning to find some new, healthier, recipes that don’t cost a small fortune. I’m not a vegetarian or vegan, I don’t have any dietary needs, but I do love my fruit and veg! I also love trying new things. When I do check out the latest cook book their recipe list goes on forever and requires hard to come by ingredients. It never occurred to me to check out vegetarian or vegan books. So when I saw a book in The Works which Anna Brim uses in her Youtube vlogs, I thought I’d check it out. Goodness me the recipes were all fantastic ones which I’d make and were also uncomplicated using ingredients even I could source! So today I decided to try out this recipe…

Okay, so I’m well aware blogging about food isn’t straight forward. By that I mean taking photos of the food itself so I won’t blog the process!

My local Morrison’s is a fantastic little store. I seem to be able to get most things from there. Apart from the Kale, They had everything I needed. It’s important to me to be able to get most things there as I don’t drive…yet anyway. So I walk A LOT! Which means I carry a lot too!

Once that was cooked I made up the sauce, cooked and added the macaroni and voila!

Oh my goodness it was delicious! Honestly, I will be making it again! It looks exactly like macaroni cheese! It tastes creamy but it doesn’t taste like macaroni cheese, obviously.
